Gerichte, die entstanden sind, um Fischer- und Bauernfamilien zu ern\u00e4hren, werden heute in Gourmetrestaurants gefeiert. Aber die besten Versionen bleiben die der Gro\u00dfm\u00fctter.  <\/p>\n\n<h2 class=\"wp-block-heading\">K\u00fcrbis-Cappellacci<\/h2>\n\n<p>Frische Pasta gef\u00fcllt mit K\u00fcrbis, Amaretti und Mostarda. Ein perfektes Gleichgewicht zwischen s\u00fc\u00df und salzig. Man w\u00fcrzt sie mit Butter und Salbei oder mit einem leichten Rag\u00f9. Sie sind die ferraresische K\u00fcche, die auf das Delta blickt.   <\/p>\n\n<h2 class=\"wp-block-heading\">Canarola-Risotto<\/h2>\n\n<p>Es hei\u00dft so wegen des Schilfs, das entlang der Fl\u00fcsse w\u00e4chst. Es ist ein Risotto mit Fr\u00f6schen, ein altes Gericht, das heute nur noch wenige zubereiten k\u00f6nnen. Wir haben es in einer versteckten Trattoria probiert und es nie vergessen.  <\/p>\n\n<h2 class=\"wp-block-heading\">Geschmorter Aal<\/h2>\n\n<p>In St\u00fccke geschnittener Aal, langsam geschmort mit Tomaten, Zwiebeln und Lorbeer. Es ist das Symbolge-richt von Comacchio. Serviert mit Polenta ist es ein Erlebnis.  <\/p>\n\n<h2 class=\"wp-block-heading\">Bigoli in Salsa<\/h2>\n\n<p>Dicke Pasta gew\u00fcrzt mit Zwiebeln und Sardellen. Einfach, intensiv, perfekt. Es ist das Gericht der Vigilien, der Fastentage. Aber wir essen es das ganze Jahr \u00fcber.   <\/p>\n\n<h2 class=\"wp-block-heading\">Wo man sie probieren kann<\/h2>\n\n<p>In Trattorien abseits der Touristenpfade. Die mit Papierservietten und gro\u00dfz\u00fcgigen Portionen.
